I cake, YOU cake!

Ottima a colazione, col caffè a fine pasto oppure a merenda.

Ingredienti
185g datteri senza semi, tagliati in piccoli pezzi
1 cucchiaino di bicarbonato
2.5dl di acqua bollente
90g di burro ammorbidito
115g di zucchero di canna
1 cucchiaino di vanillina
2 uova
185g farina 00

English Version

Sometimes it happens: you’re at work and the day become kind of boring. Phone doesn’t ring, your inbox is snoozing and you start browsing among your favourite blogs to find a recipe to cook during the week end, fantasizing about smells and flavors.
Lately I’ve been inspired by cakes and bread, as you could see yourself… so once for each doesn’t hurt anyone! :)
By clicking here and there, I’ve got to this very nice blog leelouzworld she seems to be an interesting woman.
Now I don’t even remember how I’ve got here, but the thing is that this cake is for sure molto good!
Perfect for breakfast, as a dessert together with coffee after a meal or as a snack.
Easy and quick to make, I bring it to my parents’ house as a yummy surprise last weekend. I love pampering them… and look how the first cut went!!

Ingredients
185 g dates (without stones) and cut into smaller pieces.
1 tsp baking soda
2,5 dl boiling water
90 g softened butter
115 g brown sugar
1 tsp vanilla essence (or powder, works fine)
2 eggs
185 g flour
1,5 tsp baking powder

In a bowl add the dates, the boiling water and the baking soda. Let it rest for 15 minutes while you make the rest of the cake. This will soften the dates and makes it easier to mix with the dry ingredients.
In another bowl, mix the softened butter with sugar and vanilla. It should become a light brown homogenous dough. Add one egg at a time, and mix well. Then sift half of the flour and add it to the dough, by mixing with a wooden spoon. Add half of the date mixture. mix again. then add the rest of the flour, the baking powder and the date mix.
Give it one last blend by hand with the spoon and pour into a greased cake pan, any form will do.
Bake at 180°C for 35-40 minutes, in the middle of a pre-heated oven.
When baked let it rest for 10 minutes before you remove it from its form.
Sift white icing sugar sprinkle all over the cake and enjoy!
